Instructions
- Combine the cottage cheese, almond flour, honey or maple syrup, vanilla extract, and salt in a mixing bowl. Use a spatula to mix until creamy.
- Fold in the dark chocolate chips until evenly distributed.
- Scoop small portions of the dough and roll into balls, about one inch in diameter.
- Place the rolled bites on a parchment-lined baking sheet and freeze for 1-2 hours. Store in an airtight container in the freezer.
