Description

This cheesy casserole combines tender potatoes and sweet caramelized onions, making it the ultimate comfort food for cozy dinners.


Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, thinly sliced
  • 2 large onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 1 cup beef or vegetable broth
  • ½ cup sour cream
  • 1 cup shredded Gruyère cheese (or mix of cheddar, Swiss, mozzarella)
  • Salt and pepper to taste

Instructions

  1. Caramelizing the onions: In a skillet over medium heat, melt the butter or heat the olive oil. Add the sliced onions and cook for about 20–25 minutes until they are golden and soft. Occasionally stir to prevent sticking. For an extra dimension of flavor, deglaze the pan with a splash of broth or apple juice.
  2. Preparing the potatoes: While the onions cook, slice the potatoes evenly into thin rounds. Once sliced, pat them dry with a paper towel to remove excess moisture.
  3. Mixing the base: In a mixing bowl, combine the sour cream, onion soup mix (or condensed soup), beef or vegetable broth, and half of the shredded cheese. Stir in the caramelized onions, ensuring everything is well combined.
  4. Layering the casserole: Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray. Start layering by placing half of the sliced potatoes at the bottom of the dish. Follow with half of the onion mixture. Repeat the layers with the remaining potatoes and onion mixture. Finally, sprinkle the remaining cheese on top.
  5. Baking the casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15–20 minutes until the cheese is golden brown and bubbly.
  6. Garnishing & serving: Once out of the oven, let the casserole sit for a few minutes. For a fresh touch, sprinkle some chopped herbs on top before serving hot.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months.
