- 1 lb ground beef
- 1 cup rice
- 2 cups beef broth
- 1 onion, sliced
- 1 cup shredded cheese (cheddar or Swiss)
- 1 can cream of mushroom soup
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C). Slice the onion thinly and gather all ingredients.
- Heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes.
- Combine the ground beef, rice, beef broth, cream of mushroom soup, caramelized onions, salt, and pepper in a large bowl. Mix well.
- Pour the mixture into a greased casserole dish, spreading evenly. Top with shredded cheese. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
Notes
