Description

A delicious and vibrant dish featuring sweet corn on the cob topped with creamy sauces, cotija cheese, and lime.


Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice
  • 1/2 cup crumbled cotija cheese
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat, ensuring it’s hot enough for grill marks.
  2. Grill the corn, turning occasionally, until charred and cooked through, about 10-15 minutes.
  3. Mix together mayonnaise, sour cream, chili powder, and lime juice in a bowl.
  4. Brush the creamy mixture over grilled corn, sprinkle with cotija cheese, and garnish with cilantro. Serve with lime wedges.

Notes

Elote is best served warm right off the grill. Store leftovers in an airtight container for up to 2 days.
