Instructions
- Preheat the grill to medium-high heat, ensuring it’s hot enough for grill marks.
- Grill the corn, turning occasionally, until charred and cooked through, about 10-15 minutes.
- Mix together mayonnaise, sour cream, chili powder, and lime juice in a bowl.
- Brush the creamy mixture over grilled corn, sprinkle with cotija cheese, and garnish with cilantro. Serve with lime wedges.
Notes
Elote is best served warm right off the grill. Store leftovers in an airtight container for up to 2 days.
