Instructions
- Heat a little oil in a large pot over medium heat, then add chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the broth and diced tomatoes, bringing to a gentle boil. Stir in thyme, salt, and pepper.
- Reduce the heat and let the soup simmer for about 20 minutes, or until all ingredients are tender. Enjoy!
