Description

Ingredients

  • 4 cups vegetable or chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: cooked chicken, noodles, or any veggies you like

Instructions

  1. Heat a little oil in a large pot over medium heat, then add chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the broth and diced tomatoes, bringing to a gentle boil. Stir in thyme, salt, and pepper.
  4. Reduce the heat and let the soup simmer for about 20 minutes, or until all ingredients are tender. Enjoy!

Notes

Serve with crusty bread or salad. Can be stored in the refrigerator for up to 3 days or frozen for 3 months.
