Description

A delightful dish combining juicy chicken, fresh zucchini, and melty mozzarella that pleases the whole family.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 cups cooked chicken, shredded
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a greased baking dish, layer the sliced zucchinis, ensuring they cover the bottom.
  3. Combine diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper. Mix well and pour over the shredded chicken.
  4. Sprinkle shredded mozzarella cheese on top of the chicken and tomato mixture.
  5. Drizzle with olive oil.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Allow to cool slightly before serving.
