- 2 medium zucchinis, sliced
- 2 cups cooked chicken, shredded
- 1 cup shredded mozzarella cheese
- 1 cup diced tomatoes
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- In a greased baking dish, layer the sliced zucchinis, ensuring they cover the bottom.
- Combine diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper. Mix well and pour over the shredded chicken.
- Sprinkle shredded mozzarella cheese on top of the chicken and tomato mixture.
- Drizzle with olive oil.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Allow to cool slightly before serving.
