1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
1 medium yellow onion, diced
3 cloves garlic, minced
2 cans (15 oz each) Great Northern beans, drained and rinsed
2 cans (4 oz each) chopped green chilies
4 cups chicken broth (low sodium preferred)
1 tsp ground cumin
1 tsp dried oregano
1/4 tsp cayenne pepper (adjust for heat)
Salt and black pepper to taste
1/2 cup sour cream
1/4 cup heavy cream
1 tbsp olive oil
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for about 5 minutes until translucent and soft. Stir in the minced garlic and cook for another 60 seconds until the aroma is released, being careful not to burn the garlic.
Add the diced chicken pieces to the pot. Season immediately with the cumin, oregano, cayenne pepper, salt, and black pepper. Cook the chicken for 5-7 minutes, stirring occasionally, until the outside is lightly browned and the meat is coated in the spices.
Pour in the chicken broth, the canned green chilies (including the liquid), and the white beans. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes. This allows the chicken to fully cook and the flavors to meld together.
Turn the heat to the lowest setting or turn it off entirely. Stir in the sour cream and heavy cream until the broth becomes white and creamy. For a thicker consistency, use a spoon to mash a small portion of the beans against the side of the pot before stirring everything together.
