  • 1.5 lbs ground beef
  • 1 packet (1 oz) taco seasoning
  • 3/4 cup water
  • 8 to 10 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 jar (16 oz) salsa (mild or medium)
  • 3 cups shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 3 green onions, chopped
  • 2 cups shredded lettuce
  • Optional: diced tomatoes and fresh cilantro for garnish

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef until it is completely browned. Drain any excess fat from the pan to ensure the lasagna isn’t too oily.
  2. Stir in the taco seasoning and water. Let the mixture simmer for about 5 minutes until the sauce has thickened slightly and the meat is well coated. Remove from heat.
  3. In a small bowl, mix the refried beans with 1/2 cup of the salsa. This makes the beans easier to spread and adds an extra layer of flavor to the base.
  4. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish. Place a layer of tortillas on the bottom, cutting them if necessary to cover the surface. Spread half of the bean mixture over the tortillas, followed by half of the seasoned beef, a layer of salsa, and 1 cup of cheese.
  5. Repeat the layering process with another set of tortillas, the remaining beans, meat, salsa, and another cup of cheese. Finish with a final layer of tortillas on top.
  6. Spread a thin layer of salsa over the top tortillas and sprinkle with the remaining cup of cheese. Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes until the cheese is bubbly and slightly golden.
  7. Let the lasagna rest for 5 to 10 minutes before slicing. This helps the layers stay together. Top with sour cream, shredded lettuce, olives, and green onions just before serving.
