Ingredients

Scale
  • 2 lbs turkey breast or thighs, skinless and boneless
  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Place the turkey pieces into the bottom of your slow cooker. If the pieces are very large, you can cut them into smaller chunks to ensure they are evenly coated by the sauce and cook consistently.
  2. In a medium-sized mixing bowl, whisk together the honey, soy sauce, ketchup, minced garlic, grated ginger, black pepper, and red pepper flakes. Stir until the honey is fully incorporated into the liquid.
  3. Pour the sauce mixture over the turkey in the slow cooker. Use a pair of tongs to turn the turkey pieces, making sure every inch is covered in the glaze. Cover the pot and cook on low for 5 to 6 hours or on high for 3 hours.
  4. Once the turkey is cooked through and tender, remove the turkey from the slow cooker and set it aside on a plate. In a small cup, mix the cornstarch and cold water to create a slurry. Stir the slurry into the liquid remaining in the slow cooker. Turn the heat to high and let the sauce bubble for about 10 minutes until it thickens into a glossy glaze.
  5. While the sauce thickens, use two forks to gently shred the turkey or cut it into bite-sized pieces. Return the turkey to the slow cooker and toss it in the thickened honey garlic sauce. Serve immediately while hot.
