1.5 lbs boneless, skinless chicken thighs or breasts
1/2 cup honey
1/2 cup low-sodium soy sauce

Instructions
Step 1: Prepare the Chicken. Place the boneless, skinless chicken thighs or breasts into the bottom of your slow cooker. Ensure they are spread out evenly to allow for uniform cooking. If using breasts, you may want to cut them into large chunks for even faster cooking.
Step 2: Mix the Sauce. In a medium bowl, whisk together the honey, soy sauce, ketchup, olive oil, minced garlic, diced onion, oregano, and red pepper flakes. Pour the sauce mixture directly over the chicken in the slow cooker, making sure every piece is well coated.
Step 3: Slow Cook. Cover the slow cooker with its lid. Cook on Low heat for 6 to 7 hours or on High heat for 3 to 4 hours. The chicken is done when it is tender and reaches an internal temperature of 165°F (74°C).
Step 4: Thicken the Sauce. Remove the chicken from the slow cooker and set it aside on a plate. In a small bowl, mix the cornstarch and water to create a smooth slurry. Whisk the slurry into the liquid remaining in the slow cooker. Turn the setting to High and cook for 10-15 minutes until the sauce thickens into a glaze.
Step 5: Shred and Combine. While the sauce thickens, shred the chicken using two forks or cut it into bite-sized pieces. Place the chicken back into the slow cooker and toss it in the thickened honey garlic glaze until fully coated.
