3 cups cooked long-grain white rice (preferably day-old and cold)
2 large eggs, lightly beaten
1 cup frozen peas and carrots, thawed
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons soy sauce
1 tablespoon toasted sesame oil
2 tablespoons vegetable oil, divided
3 green onions, sliced (separate whites and greens)
Salt and black pepper to taste
Instructions
Heat one tablespoon of vegetable oil in a large wok or non-stick skillet over medium-high heat. Season the shrimp with a pinch of salt and pepper. Add them to the pan in a single layer and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set them aside on a plate.
In the same pan, add a tiny bit more oil if needed. Pour in the beaten eggs and scramble them quickly until they are just set but still soft. Break them into small pieces with your spatula, then remove them from the pan and set them aside with the shrimp.
Add the remaining tablespoon of oil to the pan. Toss in the white parts of the green onions, the minced garlic, and the grated ginger. Stir-fry for about 30 seconds until fragrant. Add the peas and carrots and cook for another 2 minutes until they are heated through and slightly tender.
Turn the heat up to high. Add the cold rice to the pan, breaking up any large clumps with your spoon. Spread the rice out and let it sit for a minute to get a slight crisp, then toss and stir-fry for 3-4 minutes. Pour the soy sauce and sesame oil over the rice and stir well to ensure every grain is coated evenly.
Add the cooked shrimp and scrambled eggs back into the pan with the rice. Toss everything together for another minute until the entire dish is piping hot. Stir in the green parts of the sliced green onions. Taste and add more soy sauce or pepper if desired.
