4 boneless, skinless chicken breasts (pounded to even thickness)
2 large fresh peaches, sliced into thick wedges
8 oz fresh mozzarella cheese, sliced or pearls
1/4 cup fresh basil leaves, chiffonade or torn
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and black pepper to taste
1/4 cup balsamic glaze (for drizzling)
Instructions
Step 1: Season the Chicken Pat the chicken breasts dry with paper towels. Rub both sides with olive oil, then season generously with salt, black pepper, and garlic powder. This helps the chicken develop a nice crust and prevents it from sticking to the grill grates.
Step 2: Grill the Chicken Preheat your grill to medium-high heat. Place the chicken on the grill and cook for 6 to 7 minutes per side. Ensure the internal temperature reaches 165°F (74°C). During the last 2 minutes of grilling, place the peach slices directly on the grill grates to lightly char them.
Step 3: Melt the Cheese Once the chicken is nearly finished, place two slices of fresh mozzarella on top of each breast. Close the grill lid for about 1 minute or until the cheese is soft and beginning to melt over the sides of the chicken.
Step 4: Assemble the Toppings Carefully remove the chicken and grilled peaches from the grill. Place 2 to 3 grilled peach wedges on top of the melted mozzarella on each piece of chicken.
Step 5: Garnish and Serve Transfer the chicken to a serving platter. Sprinkle the fresh basil over the top and drizzle generously with the balsamic glaze. Serve immediately while the cheese is warm and gooey.
