  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, diced
  • 3 large carrots, peeled and sliced into rounds
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup whole milk
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup frozen peas (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large dutch oven or heavy-bottomed pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for about 5 to 7 minutes until the onions are translucent and the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
  2. Add the chicken pieces to the pot. Season with salt, pepper, thyme, and rosemary. Cook for 3-4 minutes to lightly brown the outside of the chicken. Pour in the chicken broth and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes.
  3. While the soup is simmering, whisk together the flour, baking powder, and salt in a medium mixing bowl. Pour in the milk and melted butter. Stir with a fork just until a soft, sticky dough forms. Be careful not to overmix, as this can make the dumplings tough.
  4. Remove the lid from the pot and stir in the frozen peas if using. Use a small cookie scoop or two spoons to drop rounded tablespoons of dough directly onto the surface of the simmering soup. Space them out slightly as they will expand during cooking.
  5. Place the lid back on the pot and simmer for 12 to 15 minutes. Do not lift the lid during this time; the steam trapped inside is what makes the dumplings light and fluffy. After the time is up, check one dumpling with a toothpick to ensure the center is cooked through. Garnish with fresh parsley and serve immediately.
