Step 1: Preheat and Prepare Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent the mini meatloaves from sticking and to make cleanup easier.
Step 2: Mix the Ingredients In a large mixing bowl, combine the ground beef, breadcrumbs, beaten egg, milk, garlic powder, onion powder, salt, and pepper. Use your hands or a large spoon to mix until just combined. Avoid overmixing, as this can make the meatloaf tough.
Step 3: Shape the Loaves Divide the meat mixture into six equal portions. Shape each portion into an oval or rectangular “loaf” shape, about 1 inch thick. Place them on the prepared baking sheet with at least two inches of space between each one.
Step 4: Add the Glaze and Bake Spread a thin layer of ketchup over the top of each mini meatloaf. This adds flavor and moisture. Place the baking sheet in the oven and bake for 20 to 25 minutes, or until the internal temperature reaches 160°F (71°C).
Step 5: Create the Mummy Bandages While the meatloaves bake, ensure your mashed potatoes are smooth and warm. Transfer them to a piping bag fitted with a flat “basketweave” tip or a plain round tip. Once the meatloaves are done, remove them from the oven. Pipe the mashed potatoes across each loaf in a zigzag pattern to resemble mummy bandages, leaving a small gap near the top for the eyes.
Step 6: Add the Eyes and Serve Carefully place two candy eyes or two small slices of black olives in the gap you left in the potato bandages. Serve immediately while warm.
