In a large bowl, combine the warm water and yeast. Let it sit for 5 minutes until it becomes bubbly. Add the flour, salt, and olive oil. Mix until a dough forms. Knead the dough on a lightly floured surface for about 5-8 minutes until it is smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
Place a pizza stone or an inverted baking sheet in your oven. Preheat the oven to its highest setting, usually between 475°F and 500°F (245°C-260°C). Let the oven and stone heat for at least 30 minutes to ensure a crispy bottom crust.
Punch down the risen dough and divide it into two equal portions. On a piece of parchment paper or a floured surface, stretch or roll out each piece of dough into a 10-inch circle. If the dough snaps back, let it rest for 5 minutes and try again.
Spread a thin layer of crushed San Marzano tomatoes over the dough, leaving a small border for the crust. Add the fresh mozzarella slices evenly across the pizza. Drizzle with a little olive oil and sprinkle with a tiny pinch of sea salt.
Carefully transfer the pizza (on the parchment paper or using a pizza peel) onto the hot stone or baking sheet. Bake for 8 to 10 minutes, or until the crust is golden brown and the cheese is bubbly and slightly charred. Remove from the oven.
Immediately place fresh basil leaves over the hot pizza. The residual heat will slightly wilt the basil and release its aroma without burning it. Slice and serve immediately.
