Ingredients

Scale
  • 1 lb Smoked Sausage (Kielbasa, Turkey, or Chicken sausage), sliced into rounds
  • 2 large Sweet Potatoes, peeled and cut into 1-inch cubes
  • 1 medium Red Onion, cut into thick wedges
  • 2 tablespoons Olive Oil
  • 2 tablespoons Pure Maple Syrup
  • 1.5 tablespoons Dijon Mustard
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Thyme or Rosemary
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Step 1: Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or aluminum foil for easy cleanup. If using foil, lightly spray it with non-stick cooking spray.
  2. Step 2: Prepare the Glaze: In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, minced garlic, dried thyme, salt, and black pepper until the mixture is smooth and well-combined.
  3. Step 3: Arrange the Ingredients: Place the sliced sausage, cubed sweet potatoes, and red onion wedges directly onto the prepared baking sheet. Ensure the vegetables are cut into uniform sizes so they cook at the same rate.
  4. Step 4: Toss and Coat: Pour the maple dijon glaze over the ingredients on the pan. Use your hands or large spoons to toss everything together until every piece of sausage and potato is thoroughly coated in the sauce. Spread everything out into a single layer, ensuring the pan isn’t too crowded.
  5. Step 5: Roast to Perfection: Place the sheet pan in the oven and roast for 25 to 30 minutes. Halfway through the cooking time, use a spatula to flip the sausage and toss the potatoes to ensure even browning. Roast until the sweet potatoes are fork-tender and the sausage is lightly charred.
  6. Step 6: Garnish and Serve: Remove the pan from the oven. Let it cool for a minute, then sprinkle with fresh parsley if desired. Serve immediately while hot.
