  • 1 lb Lean ground beef or Italian sausage
  • 1 Medium yellow onion, diced
  • 3 Cloves garlic, minced
  • 2 tbsp Tomato paste
  • 28 oz Crushed tomatoes
  • 6 cups Chicken or beef broth
  • 2 tsp Italian seasoning
  • 1/2 tsp Salt (plus more to taste)
  • 1/4 tsp Black pepper
  • 810 Lasagna noodles, broken into bite-sized pieces
  • 1 cup Ricotta cheese
  • 1/2 cup Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef (or sausage) and diced onion over medium-high heat. Break the meat apart with a spoon and cook until it is no longer pink. Drain any excess grease from the pot.
  2. Stir in the minced garlic and tomato paste. Cook for about 1 to 2 minutes, stirring constantly, until the garlic is fragrant and the tomato paste has darkened slightly in color. This step helps build a deep, rich flavor base.
  3. Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 15 to 20 minutes to allow the flavors to meld together.
  4. While the soup is simmering, cook the broken lasagna noodles in a separate pot of salted boiling water according to the package directions until al dente. Drain the noodles and set them aside. (Cooking them separately prevents them from soaking up too much broth or getting mushy).
  5. In a small bowl, stir together the ricotta cheese, shredded mozzarella, and grated Parmesan. This creamy mixture will be added to each individual bowl right before serving to mimic the cheesy layers of lasagna.
  6. Place a portion of the cooked noodles into each soup bowl. Ladle the hot soup over the noodles. Top each bowl with a generous dollop of the cheese mixture and garnish with fresh parsley. The heat from the soup will melt the cheese perfectly.
