  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 24 oz crushed tomatoes or marinara sauce
  • 6 cups chicken or beef broth
  • 8–10 lasagna noodles, broken into bite-sized pieces
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese (for topping)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1/4 cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Step 1: Brown the Meat. In a large pot or Dutch oven, cook the Italian sausage or ground beef over medium-high heat. Break the meat into small crumbles with a wooden spoon until it is fully browned and no longer pink. Drain any excess grease from the pot.
  2. Step 2: Sauté Aromatics. Add the diced onion to the pot with the meat. Sauté for 4-5 minutes until the onion becomes translucent and soft. Stir in the minced garlic and tomato paste, cooking for another 1-2 minutes until the garlic is fragrant and the paste has slightly darkened.
  3. Step 3: Simmer the Base. Pour in the crushed tomatoes, chicken broth, dried oregano, and dried basil. Season with a pinch of salt and pepper. Bring the liquid to a gentle boil, then reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to meld.
  4. Step 4: Cook the Noodles. Add the broken lasagna noodles directly into the simmering soup. Cook for about 10-12 minutes, or until the noodles are al dente. Be sure to stir occasionally so the pasta doesn’t stick to the bottom of the pot.
  5. Step 5: Add Cream and Greens. Stir in the heavy cream and the fresh baby spinach. Continue to cook for 2 minutes until the spinach has wilted and the soup has turned a beautiful, creamy orange-red color. Taste and adjust seasonings if necessary.
  6. Step 6: Prepare the Cheese Topping. While the soup finishes, mix the ricotta, mozzarella, and parmesan cheese in a small bowl. This “cheese dollop” will be placed on top of each serving to mimic the cheesy layers of a traditional lasagna.
