  • 1.5 lbs Salmon fillets, skin removed and cut into 1-inch cubes
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1/3 cup Honey
  • 2 tablespoons Soy sauce (or liquid aminos)
  • 1 tablespoon Fresh lemon juice
  • 3 cloves Garlic, minced
  • Optional: Sliced green onions and sesame seeds for garnish

Instructions

  1. Start by patting your salmon cubes dry with a paper towel. This is a crucial step to ensure a good sear. Place the cubes in a medium bowl and toss them with olive oil, salt, black pepper, and garlic powder until every piece is evenly coated.
  2. In a small bowl or measuring cup, whisk together the honey, soy sauce, fresh lemon juice, and minced garlic. Set this mixture aside so it is ready to pour as soon as the salmon is cooked.
  3. Heat a large non-stick skillet over medium-high heat. Once the pan is hot, add the salmon cubes in a single layer. Be careful not to crowd the pan; work in batches if necessary. Let the salmon sear undisturbed for 2-3 minutes until a golden-brown crust forms, then flip and cook for another 2 minutes.
  4. Turn the heat down to medium and pour the honey garlic mixture directly over the salmon in the pan. The sauce will begin to bubble and thicken almost immediately.
  5. Toss the salmon gently in the bubbling sauce for about 1 minute until the glaze is thick enough to coat the back of a spoon and the salmon is fully cooked through. Remove from heat immediately to prevent overcooking.
