2 slices of high-quality white bread, sourdough, or brioche
2 tablespoons unsalted butter, softened to room temperature
2 to 3 slices of sharp cheddar cheese (or your favorite melting cheese)
A pinch of salt (optional, for the crust)
Instructions
Step 1: Butter the Bread. Spread about one tablespoon of softened butter evenly across one side of each slice of bread. Make sure to cover the edges, as this ensures the entire surface of the sandwich gets that beautiful golden-brown color and crispy texture.
Step 2: Heat the Skillet. Place a non-stick skillet or cast-iron pan over medium-low heat. It is important not to rush this process with high heat, as you want the bread to toast at the same rate the cheese melts. Let the pan warm up for a minute or two before adding the bread.
Step 3: Assemble the Sandwich. Place one slice of bread, butter-side down, into the warm skillet. Layer your cheese slices evenly over the bread. Top it with the second slice of bread, making sure the butter-side is facing up toward you.
Step 4: Grill the First Side. Cook the sandwich for about 3 to 5 minutes. You can occasionally use a spatula to press down gently on the sandwich, which helps the cheese melt and ensures even contact with the pan. Once the bottom is deep golden brown, it is time to move to the next step.
Step 5: Flip and Finish. Carefully flip the sandwich over using a wide spatula. Grill the second side for another 3 to 4 minutes until it is also golden brown and the cheese is visibly oozing from the sides. Remove from the heat and let it rest for one minute before slicing.
