Ingredients

Scale
  • 1/2 cup high-quality mayonnaise
  • 2 cloves garlic, finely minced or pressed
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon kosher salt (or to taste)
  • 1/8 teaspoon cracked black pepper
  • 1/2 teaspoon fresh parsley, finely chopped (optional for garnish)

Instructions

  1. Peel the garlic cloves and mince them as finely as possible. For the smoothest texture, use a garlic press or grate the garlic using a microplane. This ensures the garlic flavor is evenly distributed throughout the sauce without large chunks.
  2. In a medium-sized mixing bowl, add the mayonnaise, fresh lemon juice, and lemon zest. The zest is important because it contains the essential oils that provide a deep citrus aroma without making the sauce too thin.
  3. Add the minced garlic, salt, and black pepper to the bowl. Use a small whisk or a spoon to stir the mixture vigorously until all ingredients are fully incorporated and the sauce looks creamy and uniform.
  4. While you can serve the aioli immediately, it tastes best if you cover the bowl and let it sit in the refrigerator for at least 30 minutes. This allows the garlic and lemon flavors to meld into the mayonnaise for a more developed taste.
