  • 1.5 lbs Sirloin steak (or Ribeye), cut into 1-inch cubes
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 5 cloves Garlic, minced
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 1/2 teaspoon Red pepper flakes (optional for heat)

Instructions

  1. Start by patting the steak cubes dry with a paper towel. This is a crucial step to ensure a good sear. Place the cubes in a large bowl and toss them with olive oil, salt, black pepper, and dried oregano until every piece is evenly coated.
  2. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Once the pan is smoking hot, add the steak bites in a single layer. Work in batches if necessary to avoid crowding the pan. Sear for 2-3 minutes per side until a brown crust forms. Remove the steak from the pan and set aside on a plate.
  3. Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until the garlic is fragrant and slightly golden, being careful not to burn it.
  4. Add the cooked steak bites back into the skillet. Toss the meat in the garlic butter for about 1 minute so the flavors can meld together. Turn off the heat immediately to prevent the steak from overcooking.
  5. Sprinkle the fresh chopped parsley over the top and give it one final stir. Serve immediately while the butter is hot and the steak is tender.
