  • 1.5 lbs chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Season the Chicken: Place your cubed chicken in a large bowl. Sprinkle with salt, black pepper, garlic powder, and onion powder. Toss the chicken thoroughly to ensure every piece is evenly coated with the spices.
  2. Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces in a single layer. Let them cook undisturbed for about 3 to 4 minutes to get a nice brown crust. Flip and cook for another 3 minutes until golden on all sides and cooked through.
  3. Create the Garlic Butter Sauce: Reduce the heat to medium. Move the chicken to the sides of the pan and add the butter to the center. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté the garlic for about 1 minute until it becomes fragrant, but be careful not to let it burn.
  4. Toss and Garnish: Toss the chicken bites back into the center of the pan, stirring them through the melted garlic butter until fully coated. Remove the skillet from the heat. Sprinkle with fresh parsley and serve immediately while hot.
