1.5 lbs chicken breast, cut into 1-inch bite-sized pieces
1/2 cup cornstarch
1/4 cup all-purpose flour
2 large eggs, beaten
1/2 cup honey
1/4 cup low-sodium soy sauce
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon sesame oil
Vegetable oil for frying
Optional: Sesame seeds and chopped green onions for garnish
Instructions
Step 1: Prepare the Chicken – Pat the chicken pieces dry with a paper towel. This is a crucial step to ensure the coating sticks properly. In a medium bowl, whisk together the cornstarch and flour. In a separate bowl, beat the eggs until smooth.
Step 2: Coat the Chicken – Dip each piece of chicken into the beaten eggs, then toss them into the flour and cornstarch mixture. Ensure every piece is fully and evenly coated. Shake off any excess flour to prevent clumping in the pan.
Step 3: Fry the Chicken – Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken in batches. Do not crowd the pan. Fry for 3-4 minutes per side until the chicken is golden brown and cooked through. Remove and drain on a wire rack or paper towels.
Step 4: Simmer the Sauce – In a small saucepan or a clean skillet, combine the honey, soy sauce, minced garlic, ginger, and sesame oil. Bring the mixture to a gentle simmer over medium heat for about 3-5 minutes until the sauce begins to thicken slightly.
Step 5: Toss and Glaze – Place the crispy chicken bites into a large mixing bowl. Pour the warm honey garlic sauce over the chicken and toss gently until every piece is coated. Serve immediately while hot and crispy.
