  • 1 lb Boneless skinless chicken breasts, sliced into cutlets
  • 12 oz Pasta (Rigatoni, Penne, or Fusilli work best)
  • 1 cup Pumpkin puree (not pumpkin pie filling)
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1/2 cup Grated Parmesan cheese
  • 1/3 cup Sun-dried tomatoes, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp Red pepper flakes (optional for heat)
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Step 1: Cook the Pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it is al dente. Reserve about half a cup of the pasta water before draining. Set the pasta aside.
  2. Step 2: Sear the Chicken. Season the chicken cutlets with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. Step 3: Sauté the Aromatics. In the same skillet, melt the butter over medium heat. Add the minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant, being careful not to burn it.
  4. Step 4: Create the Pumpkin Sauce. Whisk in the chicken broth, heavy cream, and pumpkin puree. Stir continuously until the mixture is smooth and begins to simmer gently. Let it cook for 3-5 minutes until the sauce thickens slightly.
  5. Step 5: Finish and Combine. Stir in the grated Parmesan cheese until melted. Add the cooked pasta and the seared chicken back into the skillet. Toss everything together to coat thoroughly. If the sauce is too thick, add a splash of the reserved pasta water. Season with more salt and pepper if needed.
  6. Step 6: Garnish and Serve. Remove from heat and garnish with fresh parsley or basil. Serve immediately while hot and creamy.
