Start by patting your chicken breasts dry with paper towels. Rub both sides of the chicken with salt, black pepper, garlic powder, and onion powder to ensure every bite is seasoned well.
Place the seasoned chicken breasts into the bottom of your slow cooker. Add the minced garlic, chopped sun-dried tomatoes, dried oregano, dried thyme, and red pepper flakes. Pour the chicken broth over the top.
Cover the crockpot with the lid. Cook on LOW for 4 to 6 hours or on HIGH for 3 hours. You want the chicken to be tender enough to easily pierce with a fork.
About 30 minutes before serving, open the lid and stir in the heavy cream and grated parmesan cheese. If you prefer a shredded texture, you can use two forks to break the chicken apart at this stage.
Cover and cook for the remaining 30 minutes. This allows the cheese to melt and the sauce to thicken into a beautiful, silky consistency. Garnish with fresh basil before serving.
