  • 3 large bell peppers (red, orange, and green), sliced into strips
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 810 small flour or corn tortillas, warmed

Instructions

  1. In a small bowl, whisk together the chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Place the chicken strips in a large bowl, drizzle with one tablespoon of olive oil and the lime juice, then toss with the spice mixture until evenly coated. Let it sit for 5-10 minutes if time allows.
  2. Heat the remaining tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Add the sliced bell peppers and onions. Cook, stirring occasionally, for about 5 to 7 minutes until the vegetables are tender-crisp and have some charred edges. Remove the vegetables from the skillet and set them aside on a plate.
  3. In the same skillet, add the chicken strips in a single layer (you may need to do this in batches). Cook for 5 to 6 minutes, turning occasionally, until the chicken is golden brown on the outside and cooked through. Ensure the internal temperature reaches 165°F (74°C).
  4. Add the cooked peppers and onions back into the skillet with the chicken. Toss everything together for 1 to 2 minutes to reheat the vegetables and meld the flavors. Squeeze a little extra fresh lime juice over the top for a final pop of brightness.
  5. While the meat and vegetables finish, warm your tortillas in a dry pan or wrapped in a damp paper towel in the microwave for 30 seconds. Serve the sizzling chicken and vegetable mixture immediately while hot.
