Cheap Crockpot Ground Beef And Potato Casserole

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 5–6 medium russet potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or oregano

Instructions

  1. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and no longer pink. Add the minced garlic during the last minute of cooking. Drain any excess fat from the skillet.
  2. In a medium mixing bowl, whisk together the condensed cream of mushroom soup, milk, salt, pepper, and dried herbs until the mixture is smooth and well combined.
  3. Lightly grease the inside of your crockpot. Place half of the sliced potatoes at the bottom. Top with half of the cooked ground beef mixture and 1/2 cup of shredded cheddar cheese. Repeat the layers with the remaining potatoes and beef.
  4. Pour the cream soup mixture evenly over the layers in the crockpot. Use a spoon to spread it out slightly so it seeps down into the layers.
  5. Cover and cook on Low for 6 to 7 hours or on High for 3 to 4 hours, until the potatoes are fork-tender.
  6. Once the potatoes are soft, sprinkle the remaining shredded cheddar cheese over the top. Cover for another 5-10 minutes until the cheese is melted and bubbly.
