  • 2 large Granny Smith apples (thinly sliced)
  • 2 tbsp butter (for sautéing)
  • 1 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 8 thick slices of sourdough bread
  • 2 cups sharp cheddar cheese (shredded)
  • 2 tbsp Dijon mustard (optional)
  • 23 tbsp softened butter (for spreading on bread)

Instructions

  1. In a medium skillet, melt 2 tablespoons of butter over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook for about 5 to 7 minutes, stirring occasionally, until the apples are tender and have developed a light golden-brown glaze. Once finished, remove the skillet from the heat and set aside.
  2. Lay out the eight slices of sourdough bread on a clean work surface. If you are using Dijon mustard, spread a thin, even layer on the upward-facing side of four bread slices. This adds a nice tangy kick that complements the cheese.
  3. Distribute half of the shredded cheddar cheese across the four slices of bread (the ones with mustard). Top the cheese with the warm caramelized apples, then sprinkle the remaining cheese over the apples. Placing cheese on both sides of the fruit helps act as a “glue” to keep the sandwich together. Place the remaining four slices of bread on top.
  4. Spread the softened butter generously on the outside of each sandwich. This ensures a perfectly golden and crispy crust that won’t stick to your cooking surface.
  5. Heat a panini press or a large non-stick skillet over medium heat. Place the sandwiches in the press or skillet. If using a skillet, you can place a heavy pan on top of the sandwiches to press them down. Grill for 3 to 4 minutes per side, or until the bread is golden brown and the cheese has completely melted. Serve immediately.
