  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, sliced into rounds
  • 2 medium potatoes, peeled and diced
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 package (14.1 oz) refrigerated double pie crusts
  • 1 large egg (for egg wash)

Instructions

  1. Step 1: Searing the Beef. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the pan in batches, searing until browned on all sides. Remove the beef and set it aside on a plate.
  2. Step 2: Sautéing the Vegetables. In the same pan, add the onion, carrots, and potatoes. Sauté for about 5 to 7 minutes until the onions are translucent and the vegetables begin to soften. Add the minced garlic and cook for another minute until fragrant.
  3. Step 3: Creating the Savory Gravy. Sprinkle the flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste. Gradually pour in the beef broth while stirring to prevent lumps. Add the thyme and rosemary, and bring the mixture to a simmer until thickened.
  4. Step 4: Combining the Filling. Return the browned beef to the skillet and stir in the frozen peas. Let the mixture simmer for another 5 minutes. Taste and adjust the seasoning with more salt or pepper if needed. Remove from heat and let it cool slightly.
  5. Step 5: Assembling the Pie. Preheat your oven to 400°F (200°C). Line a 9-inch pie plate with one of the crusts. Pour the beef and vegetable filling into the crust. Place the second crust over the top. Trim the edges, crimp them to seal, and cut a few small slits in the top to allow steam to escape.
