2 lbs chicken wings (split into flats and drumettes)
2 tablespoons dark soy sauce
1 tablespoon light soy sauce
2 tablespoons honey or maple syrup
1 tablespoon brown sugar
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon sesame oil
1/2 teaspoon black pepper
1 tablespoon vegetable oil
Optional: sesame seeds and sliced green onions for garnish
Instructions
Step 1: Preheat and Prep Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil and place a wire cooling rack on top. Lightly grease the rack with oil. This allows air to circulate around the wings so they get crispy on all sides.
Step 2: Dry the Chicken Pat the chicken wings very dry using paper towels. Removing excess moisture is the secret to getting crispy skin in the oven. Place the dried wings in a large mixing bowl.
Step 3: Create the Black Sauce In a small bowl, whisk together the dark soy sauce, light soy sauce, honey, brown sugar, minced garlic, grated ginger, sesame oil, and black pepper. This dark, fragrant mixture is what gives the wings their signature color and taste.
Step 4: Coat the Wings Pour about two-thirds of the sauce over the wings and toss well to ensure every piece is coated. Reserve the remaining sauce for later. Add the tablespoon of vegetable oil to the wings and toss again to help with the browning process.
Step 5: Bake the Wings Arrange the wings on the prepared wire rack in a single layer. Make sure they are not touching. Bake for 30 minutes. The wings will start to turn a deep mahogany color as the sugars in the sauce caramelize.
Step 6: Glaze and Finish Remove the wings from the oven and brush them with the reserved sauce. Flip the wings over and brush the other side. Return them to the oven for another 10 to 15 minutes, or until the sauce is bubbly and the wings are cooked through. For extra char, you can broil them for the last 2 minutes.
