Apple Butter BBQ Pulled Chicken Sandwiches

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup apple butter (sweetened or unsweetened)
  • 1 cup of your favorite BBQ sauce
  • 1/4 cup apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 68 Brioche buns
  • Optional: Creamy coleslaw for topping

Instructions

  1. In a medium mixing bowl, whisk together the apple butter, BBQ sauce, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Stir until the mixture is smooth and well combined.
  2. Place the chicken breasts in the bottom of your slow cooker. Lightly season both sides of the chicken with a pinch of salt and black pepper.
  3. Pour the apple butter BBQ sauce mixture over the chicken, ensuring each piece is well coated. Cover the slow cooker with its lid. Cook on high for 3 to 4 hours or on low for 6 to 7 hours until the chicken is tender and easy to shred.
  4. Once the chicken is cooked through, remove it from the slow cooker and place it on a large plate or cutting board. Use two forks to shred the chicken into thin strips. Return the shredded chicken to the slow cooker and toss it with the remaining sauce.
  5. Split your brioche buns and lightly toast them in a pan or oven. Pile a generous amount of the pulled chicken onto the bottom half of each bun. Top with a spoonful of coleslaw if desired, then place the top bun on and serve immediately.
