  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large Granny Smith or Honeycrisp apples, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/3 cup high-quality bourbon
  • 1/2 cup apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh rosemary, minced
  • 2 sprigs fresh thyme

Instructions

  1. Pat the pork chops dry with paper towels to ensure a good sear. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 10 minutes while you prep the vegetables.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the pan is hot, add the pork chops. Sear for 4–5 minutes per side until golden brown and cooked through. Remove the chops from the pan and set them aside on a plate, tented with foil.
  3. In the same skillet, add the remaining tablespoon of butter. Toss in the sliced apples and red onions. Sauté for about 5 minutes, or until the onions are translucent and the apples have softened and begun to caramelize.
  4. Pour the bourbon into the skillet, using a wooden spoon to scrape up any browned bits from the bottom. Let the bourbon simmer for 1–2 minutes to allow the alcohol to reduce. Be careful, as the liquid may flame slightly if using a gas stove.
  5. Stir in the apple cider, brown sugar, Dijon mustard, rosemary, and thyme. Bring the mixture to a gentle simmer. Let it cook for 3–5 minutes until the liquid has thickened into a glossy glaze.
  6. Place the pork chops and any accumulated juices back into the skillet. Spoon the apple and bourbon glaze over the meat and let it warm through for 1–2 minutes. Serve immediately while hot.
