Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • Green gel food coloring
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup green vanilla frosting
  • Assorted decorations: candy eyeballs, gummy worms, and green sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking and ensure even baking.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This should take about 2 to 3 minutes using an electric mixer.
  3. Mix in the egg, vanilla extract, lime juice, and lime zest. Add a few drops of green gel food coloring and mix until the dough reaches your desired shade of “witchy” green.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Do not overmix.
  5. Scoop rounded tablespoons of dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart. Flatten them slightly with the palm of your hand. Bake for 8 to 10 minutes, or until the edges are set but not browned.
  6. Allow the cookies to cool completely on a wire rack. Once cool, spread a thin layer of green frosting on each cookie to look like bubbling punch. Press candy eyeballs, gummy worms, and sprinkles into the frosting to complete the “Witches Brew” look.
