2 cups mashed sweet potatoes (about 2 large potatoes)
1/2 cup packed light brown sugar
2 large eggs
3/4 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later. Lightly grease the parchment with cooking spray.
In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Stir until the mixture resembles wet sand. Press the mixture firmly and evenly into the bottom of the prepared baking pan. Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly while you prepare the filling.
In a large mixing bowl, whisk together the mashed sweet potatoes and brown sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the evaporated milk, vanilla extract, cinnamon, ginger, nutmeg, and salt. Whisk until the mixture is completely combined and no large lumps remain.
Pour the sweet potato mixture over the pre-baked crust and spread it evenly. Place the pan in the oven and bake for 40 to 45 minutes, or until the center is set and no longer jiggles when the pan is gently shaken.
Remove the pan from the oven and allow it to cool completely on a wire rack at room temperature. For the cleanest cuts, refrigerate the bars for at least 2 hours before slicing. Use the parchment paper overhang to lift the entire block out of the pan, then cut into 16 squares.
