  • 15 Oreo cookies (12 whole for bases, 3 crushed for filling)
  • 16 oz cream cheese, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup semi-sweet chocolate chips (for the web)
  • 1 teaspoon coconut oil or butter (to melt with chocolate)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a standard 12-cup muffin tin with paper liners. Place one whole Oreo cookie at the bottom of each liner to serve as the crust.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until the mixture is smooth and free of lumps. You can use a hand mixer or a stand mixer for this step.
  3. Mix in the sour cream and vanilla extract until well combined. Add the eggs one at a time, beating on low speed just until incorporated. Do not overmix the batter once the eggs are added to avoid air bubbles.
  4. Gently fold in the 3 crushed Oreo cookies using a spatula. This adds a “cookies and cream” texture to the cheesecake centers.
  5. Divide the cheesecake batter evenly among the 12 muffin liners, filling each about three-quarters of the way full. Bake for 18-22 minutes, or until the edges are set but the centers still have a slight jiggle. Remove from the oven and let them cool completely at room temperature.
  6. Melt the chocolate chips and coconut oil in the microwave in 30-second intervals until smooth. Transfer the melted chocolate to a small piping bag or a plastic bag with the tip snipped off. Pipe three concentric circles on top of each cooled cheesecake cup. Use a toothpick to drag lines from the center circle outward to the edge to create the web effect.
  7. Place the cheesecake cups in the refrigerator for at least 3 hours, or overnight, to allow them to set fully before serving.
