Ingredients

Scale
  • 3 large ripe pears (such as Bosc or Anjou), peeled, cored, and sliced
  • 3 large crisp apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup rolled oats (old-fashioned)
  • 1 cup all-purpose flour
  • 3/4 cup packed light brown sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/4 teaspoon salt

Instructions

  1. Step 1: Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish or a similar sized casserole dish with butter or non-stick cooking spray to prevent the fruit from sticking.
  2. Step 2: Season the Fruit: In a large mixing bowl, combine the sliced pears, sliced apples, granulated sugar, lemon juice, cinnamon, ginger, and nutmeg. Toss everything gently until the fruit is evenly coated with the sugar and spices. Pour the fruit mixture into your prepared baking dish and spread it out evenly.
  3. Step 3: Create the Crisp Topping: In another bowl, whisk together the rolled oats, flour, brown sugar, and salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized bits of butter remaining.
  4. Step 4: Assemble and Bake: Sprinkle the oat mixture evenly over the fruit in the baking dish. Place the dish in the center of the oven and bake for 40 to 45 minutes. The dessert is ready when the fruit juices are bubbling around the edges and the topping is a beautiful golden brown.
  5. Step 5: Cool and Set: Remove the crisp from the oven and let it sit for at least 10 to 15 minutes before serving. This resting time allows the fruit juices to thicken slightly, making it easier to scoop and serve.
