  • 1 cup canned pumpkin puree (not pie filling)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream
  • Purple or green food coloring gel
  • 12 chocolate wafer cookies
  • 12 chocolate pointed candies (like Hershey’s Kisses) or miniature ice cream cones
  • Small tube of orange decorating icing

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners to ensure the cupcakes are easy to remove after baking.
  2. In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice until well combined. This ensures the leavening agents and spices are evenly distributed.
  3. In a separate large bowl, beat the pumpkin puree, vegetable oil, eggs, and granulated sugar together until the mixture is smooth and slightly pale.
  4. Gradually add the dry ingredients to the wet ingredients. Stir with a spatula or whisk just until no streaks of flour remain. Be careful not to overmix, as this can make the cupcakes tough.
  5. Divide the batter evenly among the 12 cupcake liners. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean. Transfer the cupcakes to a wire rack to cool completely.
  6. In a clean bowl, beat the softened butter until creamy. Slowly add the powdered sugar, vanilla, and heavy cream. Beat on high until light and fluffy. Mix in your choice of purple or green food coloring gel until the desired “witchy” shade is achieved.
  7. To make the hats, place a chocolate wafer cookie on a flat surface. Use a tiny dot of frosting to secure a chocolate pointed candy or a small chocolate-dipped cone to the center of the wafer. Use the orange decorating icing to pipe a small “buckle” or ribbon around the base of the point.
  8. Pipe a generous swirl of the colored buttercream onto each cooled cupcake. Carefully place one assembled witch hat on top of the frosting swirl. Your magical cupcakes are now ready to serve!
