  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 2 tablespoons heavy cream
  • Orange gel food coloring
  • 12 chocolate wafer cookies
  • 12 miniature chocolate sugar cones
  • Halloween-themed sprinkles or purple icing for the “buckle”

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners. This ensures your cupcakes won’t stick and makes for an easy cleanup later.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Mixing these thoroughly beforehand ensures an even rise and consistent flavor throughout the batter.
  3. In a large bowl, beat the pumpkin puree, granulated sugar, brown sugar, and vegetable oil until smooth. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently with a spatula just until the flour streaks disappear. Be careful not to overmix, as this can make the cupcakes tough.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool completely.
  6. In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla. Once fluffy, add a few drops of orange gel food coloring and mix until you reach your desired shade of vibrant orange.
  7. Take a chocolate wafer cookie as the base. Pipe a small ring of frosting or melted chocolate on the bottom rim of a sugar cone and press it onto the center of the cookie. Let them set for a few minutes so they stay together.
  8. Pipe a generous swirl of orange frosting onto each cooled cupcake. Place one assembled witch hat on top of each cupcake. Use a small amount of purple icing or a candy piece to create a “buckle” at the base of the cone for the finishing touch.
