1 scoop (approx. 30g) vanilla whey or plant-based protein powder
1/4 cup pure pumpkin puree (not pumpkin pie filling)
1/2 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/2 cup unsweetened almond milk (or milk of choice)
1 tablespoon maple syrup or honey
1/2 teaspoon vanilla extract
A pinch of salt
1 tablespoon dark chocolate chips or crushed pecans (optional topping)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish with a bit of coconut oil or non-stick cooking spray to ensure the oats do not stick.
Place the rolled oats, protein powder, pumpkin puree, pumpkin pie spice, baking powder, milk, maple syrup, vanilla extract, and salt into a high-speed blender. Blend for about 20-30 seconds until the mixture is completely smooth and resembles a liquid batter.
Pour the batter into your prepared baking dish. If you are using chocolate chips or pecans, sprinkle them evenly over the top. You can also swirl them into the batter with a toothpick if you prefer them mixed throughout.
Place the dish in the center of the oven and bake for 22 to 25 minutes. The edges should be set, and the top should be slightly firm to the touch. Avoid overbaking so the center stays moist and cake-like.
Carefully remove the dish from the oven. Let it cool for about 5 minutes before eating. This allows the structure to set properly so you can enjoy the perfect texture.
