  • 1 sheet frozen puff pastry (thawed but cold)
  • 1/2 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 tablespoon melted butter (optional, for brushing)
  • 1/4 teaspoon salt (to balance the sweetness)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the sugar from sticking to the pans.
  2. In a small bowl, combine the granulated sugar, pumpkin pie spice, and a pinch of salt. Stir well until the spices are evenly distributed throughout the sugar.
  3. Unfold your thawed puff pastry sheet onto a lightly floured surface. Brush a very thin layer of melted butter over the surface if you want a richer flavor, or simply sprinkle about half of the spiced sugar mixture directly onto the dough.
  4. Lightly press the sugar into the dough with a rolling pin. Fold the left side of the pastry toward the center, halfway. Do the same with the right side. Then, fold both sides again so they meet exactly in the middle. Finally, fold one half over the other, like closing a book. You should now have a long, flat log with six layers of pastry.
  5. Using a sharp knife, slice the log into pieces approximately 1/2-inch thick. Dip the cut sides of each piece into the remaining spiced sugar mixture to coat them thoroughly.
  6. Place the slices on the prepared baking sheets, leaving about 2 inches of space between them as they will expand significantly. Bake for 12 to 15 minutes, or until the sugar has caramelized and the pastry is a deep golden brown. Flip them halfway through if you prefer an even caramelization on both sides.
  7. Transfer the palmiers to a wire rack immediately. They will become crisp as they cool down.
