2 lbs (900g) full-fat cream cheese, softened to room temperature
1 1/2 cups granulated sugar
5 large eggs, room temperature
2 cups heavy cream
1 cup canned pumpkin puree (not pumpkin pie filling)
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/4 cup all-purpose flour
Instructions
Preheat your oven to 400°F (200°C). Grease a 9-inch springform pan and line it with two overlapping sheets of parchment paper. Ensure the paper rises at least 2 inches above the rim of the pan, as the cheesecake will rise significantly while baking.
In a large bowl or a stand mixer fitted with the paddle attachment, beat the softened cream cheese and sugar together on medium speed. Continue mixing for about 3 to 5 minutes until the mixture is completely smooth and the sugar has mostly dissolved.
Add the eggs one at a time, beating well after each addition. Be sure to scrape down the sides of the bowl frequently to ensure no lumps of cream cheese remain. The batter should look glossy and liquid.
Lower the mixer speed and stir in the pumpkin puree, heavy cream, pumpkin pie spice, vanilla extract, and salt. Mix until the color is a uniform, beautiful orange and the spices are evenly distributed.
Sift the flour over the batter and gently fold it in by hand or mix on the lowest speed until just combined. Over-mixing at this stage can lead to a tough texture, so be gentle.
Pour the batter into the prepared pan and tap it against the counter to release any large air bubbles. Bake for 50 to 55 minutes. The top should be dark brown or even black in spots, and the cheesecake should still have a very noticeable jiggle in the center when moved.
Let the cheesecake cool completely in the pan on a wire rack. As it cools, it will fall and create its iconic sunken look. For the best texture, refrigerate for at least 6 hours or overnight before removing from the pan and serving.
