  • 1.5 cups Speculoos cookies (like Biscoff), finely crushed
  • 3 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup cookie butter spread (creamy)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1.5 cups heavy whipping cream, chilled
  • Extra cookie crumbs and whipped cream for garnish

Instructions

  1. In a small mixing bowl, combine the crushed Speculoos cookies with the melted butter. Stir until the crumbs are evenly moistened. Distribute about two tablespoons of the mixture into the bottom of six dessert glasses or small jars. Press down lightly to create a solid base and set aside.
  2. In a large mixing bowl, beat the softened cream cheese and the cookie butter spread together using a hand mixer or stand mixer. Continue mixing until the texture is smooth and no lumps remain. This ensures your parfait has a silky, professional finish.
  3. Add the pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract to the cream cheese mixture. Beat on medium speed until all the ingredients are fully incorporated and the color is a uniform, pale orange. Scrape down the sides of the bowl with a spatula to ensure everything is mixed well.
  4. In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold about half of the whipped cream into the pumpkin mixture using a spatula. Be careful not to over-mix, as you want to keep the filling light and airy. Save the remaining whipped cream for the top of the parfaits.
  5. Pipe or spoon the pumpkin cheesecake filling over the cookie crust in each glass. You can add another layer of cookie crumbs in the middle if you like extra crunch. Top each glass with a generous dollop of the remaining whipped cream and a sprinkle of extra cookie crumbs.
  6. Place the parfaits in the refrigerator for at least one hour before serving. This allows the flavors to meld and the filling to firm up slightly for the best texture. Serve chilled and enjoy!
