  • 1/4 cup canned pumpkin puree (ensure it is not pumpkin pie filling)
  • 4 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon pure vanilla extract
  • 12 oz white chocolate melting wafers or high-quality white chocolate chips
  • Optional: Extra graham cracker crumbs or cinnamon for garnish

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and creamy. Use a hand mixer for the best results to ensure there are no lumps.
  2. Add the pumpkin puree, vanilla extract, and pumpkin pie spice to the cream cheese mixture. Mix on low speed until the pumpkin is fully incorporated and the color is consistent throughout.
  3. Stir in the graham cracker crumbs. Use a sturdy spatula to fold them in until a thick, dough-like consistency forms. If the mixture feels too wet to roll, you can add an extra tablespoon or two of crumbs.
  4. Line a baking sheet with parchment paper. Scoop about one tablespoon of the mixture at a time and roll it between your palms to form a smooth ball. Place each ball on the prepared baking sheet.
  5. Place the baking sheet in the freezer for at least 30 to 60 minutes. This step is crucial; if the truffles are too soft, they will fall apart or melt when dipped in the warm chocolate.
  6. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until completely smooth. Use a fork to dip each chilled ball into the chocolate. Tap the fork on the side of the bowl to remove excess chocolate, then return the truffle to the parchment paper.
  7. Immediately sprinkle a few graham cracker crumbs or a dash of cinnamon on top of each truffle before the chocolate sets. Let them sit at room temperature or in the fridge until the chocolate shell is firm.
