  • 12 ounces white chocolate chips (high quality)
  • 1/2 teaspoon peppermint extract (divided)
  • 1/2 cup crushed candy canes or peppermint candies)
  • 1 teaspoon coconut oil or vegetable shortening (optional, for smoother melting)

Instructions

  1. Step 1: Prepare the Baking Sheet. Line a large baking sheet with parchment paper or a silicone baking mat. This ensures the bark will lift off easily once it has set. Set aside a small space in your refrigerator where the tray can sit flat.
  2. Step 2: Melt the Dark Chocolate. Place the semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until completely smooth. Once melted, stir in 1/4 teaspoon of the peppermint extract.
  3. Step 3: Spread the First Layer. Pour the melted dark chocolate onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4 inch thick. Place the tray in the refrigerator for about 10 to 15 minutes. You want it to be set but not completely hard to ensure the layers bond.
  4. Step 4: Melt the White Chocolate. While the first layer is chilling, melt the white chocolate chips using the same microwave method. Be careful as white chocolate burns more easily than dark chocolate. Stir in the remaining 1/4 teaspoon of peppermint extract once smooth.
  5. Step 5: Add the Second Layer and Toppings. Pour the melted white chocolate over the slightly set dark chocolate layer. Spread it gently to the edges using a clean spatula. Immediately sprinkle the crushed candy canes over the top, pressing down very lightly to make sure they stick.
  6. Step 6: Chill and Break. Return the tray to the refrigerator and let it chill for at least 1 hour, or until the chocolate is completely firm. Once set, lift the parchment paper off the tray and break the bark into irregular pieces using your hands or a sharp knife.
