  • 1 ½ cups graham cracker crumbs
  • 1 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 ½ cups creamy peanut butter (divided)
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on the sides. This makes it much easier to lift the bars out of the pan once they have set.
  2. In a medium mixing bowl, combine the melted butter, graham cracker crumbs, and powdered sugar. Stir in 1 cup of the creamy peanut butter until the mixture is smooth and well combined.
  3. Transfer the peanut butter mixture into the prepared baking pan. Use a spatula or the bottom of a flat glass to press the mixture into an even, firm layer across the bottom of the pan.
  4. In a small microwave-safe bowl, combine the chocolate chips and the remaining ½ cup of peanut butter. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and glossy.
  5. Pour the melted chocolate mixture over the peanut butter base. Use a spatula to spread it evenly to the edges of the pan, creating a smooth finish.
  6. Place the pan in the refrigerator for at least 1 hour, or until the chocolate is firm. Once set, lift the bars out using the parchment paper edges and slice them into 16 squares with a sharp knife.
