Ingredients

Scale
  • 3 large Granny Smith apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter (for the crumbs)
  • 1 cup heavy whipping cream
  • 1/2 cup Greek yogurt or softened cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Caramel sauce for drizzling

Instructions

  1. Step 1: Saute the Apples – Place a medium skillet over medium heat and melt the 2 tablespoons of butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir well and cook for about 8 to 10 minutes until the apples are tender but still hold their shape. Remove from heat and let them cool completely.
  2. Step 2: Prepare the Crumb Base – In a small bowl, combine the graham cracker crumbs with the melted butter. Stir until the crumbs are evenly moistened. This will act as your “pie crust” layer in the parfait.
  3. Step 3: Whip the Cream Filling – In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the Greek yogurt or softened cream cheese until the mixture is smooth and fluffy. This creates a tangy and sweet filling that balances the spiced apples.
  4. Step 4: Assemble the Parfaits – Take four clear glasses or jars. Start by adding a layer of the graham cracker crumbs to the bottom. Follow with a layer of the cream mixture, then a generous spoonful of the cooled cinnamon apples. Repeat the layers until the glasses are full.
  5. Step 5: Garnish and Chill – Top each parfait with a final dollop of the cream mixture and a sprinkle of leftover crumbs. If you like, drizzle a little caramel sauce over the top for extra decadence. Place the parfaits in the refrigerator for at least 30 minutes before serving to let the flavors meld.
