  • 3 large Granny Smith or Honeycrisp apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter (for the crumbs)
  • 2 cups whipped cream or sweetened Greek yogurt
  • Caramel sauce for drizzling (optional)
  • Chopped pecans or walnuts for garnish (optional)

Instructions

  1. In a medium skillet over medium heat, melt the 2 tablespoons of butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir well and cook for about 8 to 10 minutes, or until the apples are tender and the sauce has thickened into a syrupy glaze. Remove from heat and let cool completely.
  2. In a small bowl, combine the graham cracker crumbs with the 2 tablespoons of melted butter. Stir until the crumbs are evenly moistened. This will act as your “crust” layer throughout the parfait.
  3. If you are using heavy cream, whip it with a little powdered sugar and vanilla until stiff peaks form. If you prefer a tangier option, you can use sweetened Greek yogurt or even a mixture of cream cheese and whipped topping for a cheesecake-like texture.
  4. Take four clear glasses or jars. Start by adding a tablespoon of the graham cracker mixture to the bottom of each glass. Follow with a layer of the cooled apple mixture, then a generous layer of the whipped cream or yogurt. Repeat the layers until the glasses are full.
  5. Top each parfait with a final sprinkle of graham cracker crumbs, a drizzle of caramel sauce, and a few chopped nuts if desired. You can serve them immediately or chill them in the refrigerator for an hour to let the flavors meld together.
