  • 1 bottle (750ml) dry red wine (such as Merlot, Zinfandel, or Cabernet Sauvignon)
  • 1 orange, sliced into rounds (plus extra for garnish)
  • 8 whole cloves
  • 2 cinnamon sticks
  • 2 star anise
  • 1/4 cup honey or maple syrup
  • 1/4 cup brandy (optional, for extra warmth)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a medium to large saucepan or a slow cooker, combine the red wine, orange slices, cloves, cinnamon sticks, and star anise. If you are using brandy and honey, add those to the pot now as well.
  2. Place the pot over medium-low heat. Bring the liquid to a very gentle simmer, but be careful not to let it reach a full boil. Boiling the wine will cause the alcohol to evaporate and can make the spices taste bitter.
  3. Reduce the heat to the lowest setting. Cover the pot and let the wine steep for at least 15 to 20 minutes. This allows the spices to release their oils and the orange to infuse the wine with citrus notes.
  4. Carefully taste the wine. If you prefer it sweeter, stir in an extra tablespoon of honey. Once you are happy with the flavor, use a fine-mesh strainer or a slotted spoon to remove the whole spices and cooked orange slices.
  5. Stir in the vanilla extract if using. Ladle the warm wine into heat-proof mugs and enjoy immediately.
