  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Oreo cookies, roughly chopped
  • 1/2 cup purple, green, and orange candy melts
  • 1/4 cup edible candy eyeballs
  • Green or purple gel food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats so the cookies don’t stick.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes with a hand mixer.
  3. Mix in the egg and vanilla extract until well combined. If you want the dough to have a specific color, add a few drops of gel food coloring now and mix until the color is even.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Gently fold in the chopped Oreo pieces and the colorful candy melts using a spatula. Ensure they are evenly distributed throughout the dough.
  6. Scoop tablespoon-sized balls of dough and place them onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10 to 12 minutes or until the edges are set but the centers still look slightly soft.
  7. Immediately after removing the cookies from the oven, gently press the edible candy eyeballs into the tops of the warm cookies. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
